Eleni’s Kitchen of Hillsboro, Oregon, is dedicated to crafting authentic Ethiopian spice blends and sauces for adventurous vegan and vegetarian cooks. Owner Eleni Woldeyes chooses the very best natural ingredients for her Ethiopian spice blends, Berbere, Mitmita and Kurerima.
Berbere is a blend of medium-hot chilis and other authentic spices from Ethiopia that are not available elsewhere. Berbere adds spicy warmth to sauces, stir-fries, stews and barbecue dishes. Or mix it with olive oil for an easy dip or barbecue marinade.
Mitmita is a dry blend of spicy-hot chili peppers and other aromatic spices. It’s traditionally used to make kitfo, an Ethiopian-style beef tartare. Mitmita is also an excellent finishing spice, adding heat and flavor to a variety of dishes.
Korerima is ground black cardamom, used in savory dishes like stir-fries and stews. It is stronger in taste than green cardamom and perfect for meats and vegetables.
As a BIPOC and woman business owner, Eleni is eager to share her love for Ethiopian food and make it accessible to as many people as possible. She also crafts two delicious sauces, Turmeric Sauce, a traditional base for mild Ethiopian stews, and Simmer Sauce, perfect for mixing with lentils or meat for authentic Ethiopian flavor. Pair your stews with Eleni’s Injera bread, and you’re in for a traditional, delicious treat!
