This recipe comes to us from our friends at Oregon Heritage Farms in Hillsboro. Choose local, in-season apples to fully capture that quintessential fall flavor, preferably Jonagold or Honeycrisp.

Ingredients
1/2 c coconut flour
3/4 tsp baking powder
1/8 tsp salt
1 tsp ground cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/3 c coconut oil
1/4 c honey
3 eggs
2 small Oregon Heritage Farms apples, peeled and grated
Steps
Preheat oven to 375 degrees Fahrenheit
Combine coconut flour, baking powder, salt, cinnamon, nutmeg, and cloves.
In a small saucepan, melt cocout oil and honey until just melted. Let cool. Add eggs and whisk ingredients together.
Pour liquids into dry ingredients. Add apple. Combine well.
Scoop into 10 muffin tins and bake for 23-28 minutes or until tops are golden brown.
