Ingredients
- 1 lb. Market Italian Sausage, Spicy or Sweet
- 2 T Sebastiano’s extra virgin olive oil
- ½ yellow onion, diced
- 2 T minced garlic
- ½ T Hungarian paprika
- ¼ t each salt and pepper
- Pinch crushed red chili flakes, as desired
- 1.5 T tomato paste
- 15 oz. can fire roasted tomatoes, whole
- 8 c low sodium chicken stock
- 4 sprigs fresh thyme
- 12 oz. tortellini or small ravioli
- 4 oz. baby spinach or kale
- ¾ c Umpqua heavy whipping cream or half and half
- 2 oz. parmesan, shredded
Steps
- In large soup pot over medium heat, cook sausage with onion and olive oil until lightly browned, 4 min.
- Add garlic, paprika, salt, pepper and chili flakes and cook 1 min.
- Stir in tomato paste, then add canned tomatoes, stock and thyme. Bring to a simmer.
- Add tortellini and continue to simmer until pasta is al dente, approx. 6 min, stirring occasionally.
- Stir in greens and cream; bring back to a simmer and remove from heat. Remove thyme sprigs.
- Serve with parmesan sprinkled over and warm Market Bakery Garlic Bread alongside.
