
Quantity: at least 20 Bites
Ingredients
- 1 box Beecher’s Serious Cheddar GF Crackers
- 1 jar Pink Wagon Classic Pickled Red Onion (Eugene, OR)
- 1 jar Vintner’s Kitchen Stout Beer Mustard (Talent, OR)
- 1/3lb of Monger’s Choice 3 year Aged Cheddar (Tillamook, OR)
- 3oz package Brooklyn Cured Bresaola
- Fresh Thyme
- 1/2inch circle cookie cutter
Steps
- Lay out 20 of Beecher’s crackers on a serving tray, a couple of inches apart.
- Cut the square of cheddar into 4 squares (approx. 1.5 x 1.5 inches). Cut each of those squares into 5 slices about 1/8 in. thick, so that you end up with 20 thin squares total.
- With a small round cookie cutter or the center of a biscuit cutter, cut a circle out of the middle of each square of cheddar.
- Take approximately ½ cup of the pickled onions and blot them dry on a cutting board, then finely dice them.
- Take a slice of bresaola and fold it in a fan shape and insert it through the hole in the piece of cheese. Lay the cheese/bresaola down on the Simple Mills cracker with the square offset, so that the orange cracker shows.
- Place a small sprig of fresh thyme on the cheese where the bresaola goes through it.
- Spoon a ¼ tsp Stout Beer Mustard on the bottom of the sprig of thyme to hold it in place.
- Place ¼ to ½ tsp diced pickled onions next to the mustard.
If you want to make more than 20 bites, there is plenty of mustard, crackers, and onions in one package of each. You would just need to buy more cheddar and bresaola.
