Thai Beef Prik King

Prik King is a ‘dry’ curry meaning that it doesn’t use coconut milk. It is simply Thai and True Prik-King Curry Paste, made in Portland, and hot oil to stir fry the vegetables and protein. That’s it! So easy, fast, and super delicious. This is one of our favorite go-to curry paste companies, and we think you will agree. Be sure to try all of their Thai curry flavors!

Ingredients

8 oz green beans, ends trimmed
2 T Safflower Oil
Pinch salt and pepper
8 oz beef steak (top sirloin or other) sliced thinly
2 T Thai and True Prik-King Curry Paste (or more to taste)
1 T ea minced ginger and garlic
1 ea red and yellow bell pepper, sliced into strips
Green onions, halved cherry tomatoes, and cilantro for garnish
Serve with hot jasmine rice

Steps

Add oil and beans to a large wok or skillet over medium-high heat. Stir fry until beans are lightly blistered. Add beef, salt, pepper, Thai and True Prik-King Curry, garlic, ginger, and peppers. Stir fry until steak is cooked medium rare, about 2-3 minutes. Serve immediately over jasmine rice with sliced green onions, tomatoes, and cilantro to garnish.
