Grilled Sablefish

Ingredients

  • 4 Sablefish Filets
  • 3 T Felton & Mary’s Spice Rub
  • 2T Jacobsen’s Salt
  • 3T compound Butter (Different Recipe)
  • 2T oil

Steps

  1. Coat all sides of sablefish with blackening seasoning.
  2. Heat cast iron on the grill over high heat. Add oil and bring to where oil just starts to smoke.
  3. Sear cod for 3-4 minutes forming a nice crispy crust. Add your compound butter and flip your cod filet. Cook for another 5-6 min., basting your compound butter over your cod.
  4.  Once sablefish reaches 145F internal temp, take out of pan and add a little more compound butter over and cover letting the butter melt. Then you’re ready to dig in!
