Ingredients
- 4 Sablefish Filets
- 3 T Felton & Mary’s Spice Rub
- 2T Jacobsen’s Salt
- 3T compound Butter (Different Recipe)
- 2T oil
Steps
- Coat all sides of sablefish with blackening seasoning.
- Heat cast iron on the grill over high heat. Add oil and bring to where oil just starts to smoke.
- Sear cod for 3-4 minutes forming a nice crispy crust. Add your compound butter and flip your cod filet. Cook for another 5-6 min., basting your compound butter over your cod.
- Once sablefish reaches 145F internal temp, take out of pan and add a little more compound butter over and cover letting the butter melt. Then you’re ready to dig in!
