Hazelnut Crusted Halibut

Our nutty and cheesy crust elevates fresh halibut fillets into an elegant, easy-to-make entrée.


2 lb halibut fillets, cut in 4 portions
1 c hazelnuts, chopped
2/3 c Parmesan cheese, shredded
1 c Panko breadcrumbs (Japanese style) *
3 lg eggs, beaten
1 c flour, seasoned with sea salt & pepper *
1/2 c olive oil


Preheat oven to 350 degrees. Blend Panko, Parmesan & hazelnuts in bowl. Dredge halibut first in flour, then beaten eggs, then Parmesan/nut mixture. Set aside.

In skillet, heat oil on med heat. Brown fillets 2-3 min each side; place skillet in oven; bake 10 min. (Internal temp should be at least 145 degrees.)

Serve over spring mix greens, tossed with your favorite dressing.

* To make this recipe gluten-free friendly, use gluten-free panko and flour.
