Lime Ginger Halibut and Mango Salsa

Ginger Lime Halibut

Perk up fresh halibut fillets with our ginger and garlic marinade, then top with fresh mango salsa. Delicious!


4 (6 oz) halibut fillets, skin on.

2 T ginger, minced
2 T garlic, minced
3 T lime juice
1/3 c peanut oil (plus more for sautéing)
2 c Panko Japanese-style breadcrumbs *

Mango Salsa
1 ripe red mango, peeled & diced
1 jalapeño, seeded & minced
1 roasted red pepper, diced
1/2 sm red onion, diced fine
1 T ginger, minced
1 T garlic, minced
2 T peanut oil
1 dash hot sauce (Cholula or Tabasco)
1 T cilantro, chopped
2 T lime juice
pinch, Kosher salt & ground pepper


Preheat oven to 375°. Marinate fillets 15-30 min.

Remove fillets; press, flesh side only, into breadcrumbs. Sauté in a pre-heated skillet, breadcrumb side down for 4-5 min. Carefully turn fillet over; place skillet in preheated oven 7-10 min until flesh is opaque.

Place on individual plates, top with mango salsa and serve with Jasmine rice.

* To make this recipe gluten-free friendly, use gluten-free panko.
