Steak and Cipollini Sandwiches with Parmesan Oven Fries

Flat Iron Arrugula Sandwich

Fresh and hearty, these open-faced sandwiches have fantastic flavor and come together in a flash.

Cooking time: 8 min for steak, 30 min for oven fries


3 flat iron steaks, approx. 1 1/2 lb
2 T olive oil
1 T kosher salt
1/2 T freshly ground black pepper
4 slices fresh ciabatta bread
4 T Lemon Parsley Mayo
2 tomatoes, sliced
2 c baby arugula
Garlic Caper Dressing
1/3 c cipollini onions, wedged (available at your Market Olive Bar)
1/3 lb Sartori Bellavitano cheese, shaved

Lemon Parsley Mayo
1 T flat-leaf parsley, chopped
1 T fresh lemon juice
pinch of salt and pepper
1/2 c mayonnaise

Garlic Caper Dressing
1 T capers, drained
1 garlic clove, minced
3 T extra virgin olive oil
1 T fresh lemon juice
1/2 t Dijon mustard
salt and pepper to taste

Parmesan Oven Fries
2 lg russet potatoes, scrubbed
1/4 lb Parmesan cheese, grated
3 T olive oil
1 T salt
1/2 T fresh black pepper, ground


Preheat grill or cast iron skillet. Coat steaks with olive oil, salt and pepper. Grill or sear to desired doneness, approx. 3 min per side for med-rare. Remove from heat and let rest. Very lightly toast ciabatta slices in oven or on grill. Top each with 1 T of Lemon-Parsley Mayo and 2 tomato slices. Slice steak thinly, discarding white tendon in center if necessary. Toss steak and arugula in Garlic-Caper Dressing and divide among bread slices. Top with cipollini wedges and shaved cheese. Serve these delicious sandwiches with our recipe for Parmesan Oven Fries.

Lemon Parsley Mayo
Combine all ingredients in a small bowl; refrigerate until ready to use.

Garlic Caper Dressing
Whisk all ingredients together in a mixing bowl; set aside.

Parmesan Oven Fries
Preheat oven to 350 degrees. Slice potatoes into thick-cut fries, then toss with cheese, oil, salt and pepper. Lightly oil sheet pan or coat with cooking spray. Spread fries in single layer and cook ?15 min. Remove from oven and turn fries with spatula, pressing into single layer and returning to oven for 15-20 min more until softened and golden. Serve immediately.
