Green Beans with Lemon and Hazelnuts

Healthy and bright, this sensational side features green beans, lemon, hazelnuts and shallots. Simply season and roast with olive oil and garlic.


1½ lb green beans, trimmed
1 lemon, zest and juice of
heavy pinch salt and pepper
2 T olive oil
1 T roasted garlic
3 oz hazelnuts, halved
¼ lb shallots, peeled


Preheat oven to 350°. Slice shallots lengthwise. Toss all, except lemon zest and juice. Spread on parchment-lined sheet pan. Roast 15 min, tossing twice. Remove from oven and add lemon zest and juice. Toss and serve immediately, adding more salt and olive oil, as desired.
