Green Beans with Olive Oil, Lemon & Parmesan

Quick, fresh and delicious, these green beans will disappear fast. Shallots, lemon and Parmesan make them a versatile dish to serve alongside your favorite proteins for the holidays or any day.

2 lb green beans, trimmed
¼ c extra virgin olive oil
4 oz shallots, sliced thin
1 lemon, zest and juice of
2 oz Parmesan, grated
½ t sea salt
¼ t black pepper, ground


Pick stems off of green beans. Blanch beans in boiling, lightly salted water 2 min. Drain and shock in ice water. When cool, drain and blot dry on paper towels. Warm oil and shallots over med heat 1 min. Add beans, salt and pepper, cooking until tender, 8 min. Add lemon juice, zest and Parmesan. Serve hot.
