Ingredients

1/2 lb bulk chorizo from your Market Meat Department
10-12 cherry or grape tomatoes, halved
1-2 T unsalted butter, softened
1/2 c crema Mexicana, plus more for serving*
1/3 c Cotija, crumbled, plus more for garnish
8 eggs
salt and pepper, to taste
spicy or mild chili powder for garnish

Steps

In a sauté pan over med-high heat, brown chorizo and break into small pieces, cooking completely. Remove meat with a slotted spoon, transferring to a papertowel-lined plate, reserving chorizo drippings. Reheat pan briefly, then quickly sauté and coat tomatoes with drippings. Remove tomatoes from heat and set aside.

Preheat oven to 375 degrees. Butter bottom and sides of each dish. Place 2 T crema Mexicana into each dish, followed by a sprinkle of Cotija, 2 T meat and 5 cherry tomato halves. Break 2 eggs into each, season with salt and pepper, then garnish with more meat and Cotija. Bake 15-18 min, until the eggs are set (depending on your desired doneness). Lightly garnish with a pinch of chili powder and serve immediately, accompanied by whole-grain tortilla chips with salsa and additional crema.

*Crema Mexicana is available in your Market Specialty Cheese Shop. Sour cream is an excellent substitute.
