Irish Chicken with Bacon and Potatoes

This is the easy-to-make meal you dream of coming home to. It doesn’t get any better than opening the door to delicious aromas of perfectly roasted chicken and potatoes soaking in its savory juices. Toss in bacon and onions, and you have yourself a dream dinner come true.

Ingredients

Chicken and Potatoes

  • 4 slices Carlton Farms bacon
  • 1 whole chicken, cut into parts, rubbed
  • 2 T olive oil
  • 1 medium yellow onion, wedged
  • 4 medium Yukon gold potatoes, quartered
  • ½ head green cabbage, wedged
  • 6 small carrots, peeled
  • 2 T fresh Italian parsley, rough chopped

Roasting Rub

  • ½ t each onion powder and garlic powder
  • 1 t salt
  • 2 t fresh thyme (leaves only)
  • 1 t Peppered Earth Smoked Paprika

Guinness Sauce

  • ½ c sugar
  • 2 T honey
  • ½ c Guinness or stout beer
  • 2 T apple cider vinegar
  • Pinch each salt & pepper

Steps

  1. Preheat oven to 375F. Combine seasonings for Roasting Rub. Season chicken on all sides.
  2. Heat oil in a large oven proof skillet or roasting pan. Add bacon and brown lightly. Remove from pan and reserve.
  3. Sear chicken pieces, skin side down, until lightly browned. Remove and reserve.
  4. Arrange potatoes, cut side down, in pan. Place onion, cabbage, and carrots around the pan. Place chicken, skin side up, over vegetables. Transfer to oven and bake until 165F internal temp is reached in the thickest part of the breast, 45 min. Crumble bacon over for the last 5 min. of cooking.
  5. Place sugar and honey in heavy-bottom sauce pan over medium high heat and cook, swirling gently, until melted and sauce darkens, about 3 min. Carefully add beer and vinegar and whisk together. Cook until reduced by half. Remove from heat and let cool to room temp. Add salt/pepper. Pour over chicken when serving. Parsley to garnish.
