Grilled Salmon Toasts with Avocado and Heirloom Tomatoes

Beautiful and delicious, our recipe for grilled salmon served on toasted artisan bread with avocado and fresh veggies is sure to be a crowd-pleasing hit for your summer get-togethers.

Salmon Toasts
1 lb salmon fillet, cut into 4 portions
4 T extra virgin olive oil, divided
pinch salt and pepper
4 slices artisan bread *
2 avocados, pitted
1/2 lemon, juice of
fresh baby greens or micro greens

Heirloom Tomato Relish
1 lg or 2 med heirloom tomatoes, diced small
1/2 red onion, diced fine
1/2 yellow bell pepper, diced fine
3 T extra virgin olive oil
2 T champagne vinegar or white balsamic vinegar
pinch salt and pepper

Lemon Dill Sauce
1/3 c sour cream
1/3 c mayo
1 T lemon juice
1 t lemon zest
1 T fresh chives, chopped
1 T fresh dill, chopped
pinch salt and pepper


Salmon Toasts
Season salmon fillets with 2 T olive oil and a light sprinkle of salt and pepper. Grill 3-4 min per side until internal temp of 135 degrees is reached. Remove from heat and keep warm. Meanwhile, drizzle remaining oil over bread slices and grill lightly. While warm, spread half of an avocado over each slice, drizzle with lemon juice, add greens, salmon and top with Heirloom Tomato Relish and Lemon Dill Sauce.

Heirloom Tomato Relish
Combine all and keep chilled until ready to serve. Use within 4 hours for best quality.

Combine all. Keep chilled until ready to use.
